ROASTED BROCCOLI

There’s nothing quite so magically tasty as vegetables caramelizing under heat. This recipe lets broccoli shine!

INGREDIENTS
2 heads of broccoli
1 tablespoon kosher salt
1/2 tablespoon ground black pepper
1/4 cup extra virgin olive oil

MATERIALS
Cutting board
Baking sheet or roasting pan
Measuring cups and spoons

DIRECTIONS
Step 1: Preheat oven to 450˚F

Step 2: Prepare the broccoli. Break apart the head of broccoli into florets. Remove and discard bottom 1 inch of stalk and slice the remaining stalk into 1/2 inch coins.

Step 3: Add olive oil to baking sheet. Place broccoli florets and trimmed stalk onto baking sheet, and toss to coat with oil. Sprinkle salt and pepper and toss again to evenly coat.

Step 4: Roast broccoli in oven for about 18 minutes, until stalk is tender and you can slip a knife through it without resistance. Turn on the broiler to high and broil for 2 minute or until florets are crisped.

Step 5: Serve! Check out some suggestions below for how to amp up the flavor.

SPICE IT UP!
• Try adding paprika, cumin, and lemon juice to the broccoli before baking.
• Try adding a few cloves of garlic and a few sage leaves to the pan before baking.
• Serve with chipotle or lemon mayonnaise for dipping.
